Baked Salmon With Blueberry Balsamic Reduction

  •   Ingredients  
  • 4 salmon fillets (6 oz each)
  • 1 c Blueberry Balsamic Vinegar
  • 3/4 c blueberries
  • 2 T fresh dill, chopped (or 1 t dried)

Directions  

  • 1. Preheat oven to 375Ëš. Place fillets in a shallow      baking dish. Bake about 15 minutes until juices run clear and salmon      flakes easily with a fork. 
  • 2. Add balsamic and blueberries to a saucepan. Bring      to a boil then turn heat to low. Use a wooden spoon to smash the      blueberries and stir occasionally for 5-10 minutes until it is thick. Stir      dill into sauce

3. Plate salmon and pour sauce over the fillets      individually.

Basil and Ricotta Spread

  Basil and Ricotta Spread Basil and Ricotta Spread with Basil Olive Oil and Sicilian Sea Salt. Ingredients  

  • 1 1/2 c part skim milk ricotta cheese
  • 1/2 c Basil Olive Oil
  • 5 sprig of fresh basil, washed & dried
  • 1 clove fresh garlic, smashed
  • 1 T fresh squeezed lemon juice 
  • 1 t Sicilian Sea Salt

Directions  

  • 1. Place the ingredients inside the bowl of a food      processor or blender. Process until creamy and smooth in consistency. Add      seasoning to taste. Store tightly covered in the refrigerator for up to      three days.

Oven Baked Fajitas

  • Ingredients:
    1 pound boneless, skinless chicken breasts, cut into strips
    2 Tbsp GARLIC CILANTRO OLIVE OILor ROASTED GARLIC OLIVE OIL
    2 tsp chili powder
    1 1/2 tsp cumin
    1/2 tsp garlic powder
    1/2 tsp dried oregano
    1/4 tsp seasoned salt
    1 (15 oz) can diced tomatoes with green chilies (Rotel)
    1 medium onion, sliced
    1/2 red bell pepper, cut into strips
    1/2 green bell pepper, cut into strips Directions:
    Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
    In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt.
    Drizzle the spice mixture over the chicken and stir to coat.
    Next add the tomatoes, peppers, and onions to the dish and stir to combine.
    Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender.  ntil chicken is cooked through and the vegetables are tender.
